  • 4 large jacket potatoes, cooked
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 8 ounces (225g) ground beef
  • 1 can (14 ounces/400g) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • Grated Parmesan cheese, for topping
  • Fresh basil leaves, for garnish

Instructions:

1. Heat olive oil in a large skillet or saucepan over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté until the vegetables are softened and slightly golden, about 5 minutes.

2. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon or spatula as it cooks.

3. Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, sugar, salt, and pepper. Reduce the heat to low and simmer the sauce for about 20-30 minutes, allowing the flavors to meld together. If the sauce becomes too thick, you can add a little water or beef broth to achieve the desired consistency.

4. While the sauce simmers, slice open the cooked jacket potatoes lengthwise. Use a fork to fluff the insides of the potatoes slightly.
