Cooking with Coals

Cooking jacket potatoes using coals is a fantastic way to infuse them with a delicious smoky flavour while achieving that perfectly crispy skin. Here’s a step-by-step guide to cooking jacket potatoes over coals:

1. Select your potatoes: Choose large, evenly-sized potatoes.

2. Prepare the potatoes: Wash the potatoes thoroughly to remove any dirt. Pat them dry with a clean towel.

3. Prick the potatoes: Use a fork to prick the potatoes all over. This allows steam to escape while cooking and prevents them from bursting.

4. Wrap in foil: Wrap each potato tightly in a double layer of aluminum foil. Make sure the foil is securely sealed to trap the heat inside.

5. Prepare the fire: Build a fire using charcoal or wood. Let the flames die down until you have a bed of glowing hot coals.

6. Create a coal bed: Spread the hot coals evenly, creating a flat bed of embers about 2-3 inches thick.

7. Place the potatoes: Carefully place the foil-wrapped potatoes directly onto the hot coals. Space them out to ensure even cooking.

8. Cook the potatoes: Allow the potatoes to cook undisturbed for about 45 minutes to 1 hour, depending on their size. Turn them occasionally using tongs to ensure they cook evenly on all sides.

9. Check for doneness: To check if the potatoes are done, carefully unwrap one potato and insert a knife into the center. If it slides through easily and the flesh is soft, they are ready. If not, re-wrap and continue cooking for a little longer.

10. Serve and enjoy: Once the potatoes are cooked to perfection, remove them from the coals. Carefully unwrap each potato and slice it open. Add one of our mouth-watering fillings.
