 Camp Oven Stuffed Pumpkin

The ultimate crowd-pleaser that's guaranteed to steal the show at your next camp cook-up. Imagine a perfectly roasted pumpkin, filled with savory goodness, nestled in the coals of your campfire.

Equipment

  • Camp Oven

Ingredients
  

  • 1 whole Large Pumpkin Make sure it will fit in your camp oven!
  • 500 grams Beef Mince
  • 1 Onion Diced
  • 1 Red Capsicum Diced
  • 1 cup Rice Cooked You can substitute for packet rice already cooked like Uncle Ben's White or Brown Rice
  • 1 can Tomatoes Chopped
  • 1 tbsp Crushed Garlic You can use less or more!
  • 1 tsp Mixed Italian Herbs
  • 2 Eggs Optional - I do not use as I can't eat eggs but this will help bind the ingredients

Instructions
 

  • Firstly wash the outside of the pumpkin
  • Cut a circle at the top of the pumpkin. Remove top and set aside. Use a tablespoon and dig out the inside of the pumpkin, leaving about a 3/5cm wall of pumpkin. Discard any seeds and save the flesh for another dish
  • In a large bowl mix all other ingredients
  • Place mixture inside Pumpkin
  • Place top lid of Pumpkin on
  • Place filled Pumpkin inside your camp oven on a skillet
  • Cook hanging over fire and place coals on top of camp oven
