Aussie Spuds

Ingredients

  • 4 large baking potatoes
  • 4 slices of bacon, cooked and chopped
  • 4 eggs
  • 1/2 cup shredded tasty cheese
  • 1/4 cup chopped fresh parsley
  • 1 onion diced or sliced
  • Salt and pepper, to taste

FILLING Instructions:

  1. Prepare the filling: In a skillet, cook the bacon until crispy, add the onion until tender. Remove from the skillet and set aside. In the same skillet, cook the eggs sunny-side up or scramble them, according to your preference.

  2. Slice and fluff the potatoes: Carefully remove the baked potatoes from the camp oven or BBQ using oven mitts or a towel. Allow them to cool slightly before handling. Cut a lengthwise slit in the top of each potato, being careful not to cut all the way through. Gently squeeze the ends of the potato to fluff up the flesh inside.

  3. Stuff the potatoes: Sprinkle a portion of the cooked chopped bacon & onion mix into each potato, followed by a cooked egg. Top with shredded cheese and sprinkle with chopped fresh parsley. Season with salt and pepper to taste
