Cooking jacket potatoes using coals is a fantastic way to infuse them with a delicious smoky flavour while achieving that perfectly crispy skin. Here’s a step-by-step guide to cooking jacket potatoes over coals:

1. Select your potatoes: Choose large, evenly-sized potatoes.

2. Prepare the potatoes: Wash the potatoes thoroughly to remove any dirt. Pat them dry with a clean towel.

3. Prick the potatoes: Use a fork to prick the potatoes all over. This allows steam to escape while cooking and prevents them from bursting.

4. Wrap in foil: Wrap each potato tightly in a double layer of aluminum foil. Make sure the foil is securely sealed to trap the heat inside.

5. Prepare the fire: Build a fire using charcoal or wood. Let the flames die down until you have a bed of glowing hot coals.

6. Create a coal bed: Spread the hot coals evenly, creating a flat bed of embers about 2-3 inches thick.
